Salsa

Good Morning.

Sorry I was AWAL this week, I had a horrible sinus infection.  The medical professional that looked up my nose said there were all the colors of the rainbow.  I would like to take that as a compliment but, upon further reflection have decided that is not so good.  I am on antibiotics and have started to feel better, the hubs said I no longer snore like Darth Vader, now that had to be attractive.

My garden of tomatoes is growing like gangbusters, I also have carrots and peppers.  Not much you can do with those three things huh?  I am going for carrotless salsa.

You all know I hate to purchase any thing.  We use lots of salsa through the year and I believe it is something we can make.  The hubs is usually the salsa maker, it turns out good just not hot.  We love hot salsa.  So I decided to try my hand this morning.

I have all this lovely produce that must be used so why not.

I used:

  1. 3 tomatoes
  2. 2 jalapeno peppers
  3. 1 cayenne pepper
  4. 1/4 onion
  5. pinch of salt

It has a kick to it, however; it is too chunky, more like pico de gallo.  I will wait for the hubs to get up and see if we should send it through the food processor.  Oh if only I had an emersion blender.  It is on my wish list for this canning season, just have not made the commitment.

    Another way you can make it super easy it to put all the ingredients from the garden right into a big tray and roast them all together until you house smells like a Mexican restaraunt and it looks good to you. Blender it or food process and can. It ends up more like the picante sauce you buy in the market.
